Out of time

I don't know how it happens EVERY DAY, but I am always running out of time! I get up early and get everyone up and ready, yet we are still pushing it to get out the door on time. After school we get right on the homework and get backpacks put away and yet we still barely make it to soccer on time. Not to mention making dinner - that's impossible lately! So, my comment loving friends (even if you're not a commenter usually, I'd love your input) What are some quick and easy dinner ideas that have been been a hit with your family?? I need some "time saving" recipes and I need them quick!

BLACK BEAN PIE

1 green pepper, chopped
1/3 cup onion, chopped
2 cloves garlic, minced
½ tsp. cumin
1 tsp. salt
1/8 tsp. pepper
2 cans black beans, rinsed and drained
1 cup of water
10 oz. frozen corn
2 ½ cups shredded cheese
4 flour tortillas

Combine green pepper, onion, garlic, spices, beans and water. Bring to a boil. Simmer until most of the liquid is gone about 8-10 minutes. Stir in corn.
Layer: tortillas, beans, cheese (four times) in a glass pan. Bake at 400 until heated through, about 20 minutes. Cut into wedges to serve. Serve with sour cream, salsa, guacamole etc..

Dude! Get the orange chicken from costco. (it's by the eggrolls) It's cheap and cooks in 15-20 minutes! SO YUMMY! Doesn't even come close to tasing like it was out of a box.

Here are a few of my favorite ideas...

Pita Pizzas: (this is fun cause everyone can make their own.)

Top a large pita with
1/4 cup bottled spaghetti sauce (I like Prago)
1/2 cup shredded mozzarella
let them choose their own toppings or just do cheese.
Bake at 400 for 10 min.

You can put a salad with it or fruit or just the pizza. I REALLY like it with crushed red pepper on top (makes for a spice pizza)

Poppy Seed Chicken ( this is kind of caesural like, but it's way yummy and my husband that is totally picky LOVES this.

4 chicken breast boiled & cubed (I use 2 cans of Costcos Kirkland canned chicken instead, way faster)

2 cans of cram of chicken
8 oz sour cream
2 stacks town house crackers
1 cube butter melted 2 T. Poppy seeds
rice

Mix chicken, soup & sour cream. Spread into 9x13 pan. In a ziplock bag pour butter and poppy seeds over crackers. Use a rolling-pin to crush and mix. Dump over Chicken mixture. Bake at 350 for 40 min (or until it's hot, everything is already cooked) Serve over rice. (this one all so freezes great so you could pre make it and freeze it or pop it in the fridge till your read to bake. total prep time 5 min. No lie!

If you want to make it a bit healthier you can use the healthy chose cream of chicken, light sour cream and you could also put broccoli under the chicken mixture to get in a veggie.

Goulash:

1 lb. Lean gound beef
28 oz canned crushed tomatoes
8 oz can tomato sauce
2 cups uncooked macaroni

In a large skillet (I use my eclectic skillet) or Brown beef, drain fat. Add crushed or diced tomatoes, and tomato sauce and any seasonings you would like i.e. garlic salt, pepper, basil, you could even add green beans. Cook macaroni add the cooked and drained macaroni and stir.

This is way easy and you can totally play with this one. add more or less of something. What ever sounds good.

Good luck. This is my least favorite meal of the day. My kids are always exhausted, hungry, screaming and under my feet. Good Luck!

I don't know if it is against FDA regulations or not... but I buy ground beef in bulk, brown it, put it in several ziploc bags, and freeze it. It makes it really easy to make tacos, burritos, tater tot casseroles and other quick (and cheap) meals FAST!

I live for quick and easy meals! It's about all I do! My favorite standby that I try to always have things on hand for is bean burritos: flour tortillas, refried beans, cheese, lettuce, tomato, and salsa. We just make and heat each one for a minute in the microwave. My mom always kept a jar of spaghetti or pizza sauce, shredded cheese, frozen chopped ham, and pineapple on hand so she could grab a loaf of french bread at the store and make french bread pizza.

SUPER FAST. You can boil the chicken, noodles, and be making the sauce on three separate burners...then combine when everything is ready.

I need some of your recipes too.

HEY - maybe we can make some kind of family recipe book - I know I'm in desperate need!

I am a huge fan of the dinner group- You need to get one started!!! Cook one day a week and know that the other days dinner will be brought to you and ready to eat by 5:30!! It is so amazing!!!

Oh, Jodi! I KNOW you are SuperMom. Even YOU have nights when dinner does not get made? Makes me like you MORE! We have had lots of nights like that this summer. :)

Here are a few of our easy basics. I'd love to know some of yours. :)

Spaghetti and Meatballs-grab the bag of frozen meatballs from Costco and you can heat them in the microwave. Open a can of sauce and boil the noodles. Ready in minutes and the family LOVES it! :) They think it is special because of the meatballs. Nope-it is just easy for Mommy. :) Had it tonight, in fact.

Another favorite is the Teriyaki Asia Noodles. I buy them at Walmart for like 2 bucks a box. It comes with those yummy noodles(that you ave to boil for about 7 minutes, a packet of sesame seeds and the sauce. I add whatever veggies I have on hand (usually broccoli and mushrooms)and chicken. Yummy and fast.
