We LOVE zucchini at our house. We didn't plant a zucchini plant in our garden this year. We have learned from years past that our family and friends grow enough for all of Utah county and really enjoy sharing their beautiful crop with us. I have a bunch of frozen grated zucchini in my freezer and and a bowl full of grated zucchini in my fridge. I also have zucchini muffins frozen in ziploc baggies and zucchini bread sitting on my counter. Those are all pretty healthy ways to enjoy this wonderful vegetable...so I found a few "not so healthy" recipes and tried them out. YUM!

| Chocolate Zucchini Cake |
I made this recipe 3 times this week and it was a big hit with everyone that tasted it. It is moist and rich and dense and probably the best chocolate cake I've ever had! Seriously! So I'm sharing the recipe - but if we're ever at a family function together and assigned to bring dessert, I call this one!
2 cups flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
4 eggs
3/4 cup oil
3/4 cup applesauce
3 cups grated zucchini
Mix all ingredients well and pour into greased/floured bundt pan. Bake @ 350 for 50-60 min. Let cool and sprinkle powdered sugar on top.

Obviously, she got that musical Dahl gene! Beautiful! I used to love singing hymns at your house on Sunday and pretending that I could sing just as good as everyone else.
